2002 Cabernet Sauvignon Grapes

Cabernet Sauvignon is a red grape variety of great importance and distinction.  It is planted and grown throughout the wine producing world.  It makes fine varietal wines, as well as blends and is known for its distinct blackcurrant aroma and taste.  Cabernet Sauvignon is capable of developing great complexity with age.

The Cabernet Sauvignon, at Domaine Sainte Rose, was harvested on the 8th of October when the grapes registered 14.3 Baumé and had an acidity content of 4.3 grams/litre H2S04.  The health and quality of the fruit is very good.

The Cabernet Sauvignon will undergo maceration for 3 weeks in order to extract flavour and colour and the majority of the Cabernet will be oak-aged.
