2003 Cabernet Sauvignon Grapes

Cabernet Sauvignon is a red grape variety of great importance and distinction.  It is planted and grown throughout the wine producing world.  It makes fine varietal wines, as well as blends and is known for its distinct blackcurrant aroma and taste.  Cabernet Sauvignon is capable of developing great complexity with age.

The Cabernet Sauvignon, at Domaine Sainte Rose, was harvested on the 10th of September when the grapes registered 13.5 Baumé and had an acidity content of 4.76 grams/litre H2S04. 

The Cabernet Sauvignon was  maceration for 1 week in order to extract flavour and colour.  This is a significantly short period than the last year due to the abundance of colour and flavour present in the grapes at the time of harvesting.

Domaine Sainte Rose aims to create a single varietal Cabernet Sauvignon , Cabernet Sauvignon/Merlot and a Syrah/Cabernet blend from the 2003 vintage.
