2003 Merlot Grapes

Merlot is best known for its velvety, smooth and mellow characteristics and it is often used to blend with the variety Cabernet Sauvignon.

A portion of the Merlot vines at Domaine Sainte Rose were green harvested during July 2003 in order to produce concentrated, full-flavoured fruit.  The Merlot was harvested on the 3rd of September when the grapes registered 14.6 Baumé and had an acidity content of 5.06 grams/litre H2S04.

The Merlot was macerated for 1 week in order to extract flavour and colour.  This is a significantly short period than the last year due to the abundance of colour and flavour present in the grapes at the time of harvesting.

Domaine Sainte Rose will produce one merlot based wine from the 2003 vintage.

The Mistral Merlot- Oak aged
