2003 Alicante Grapes
Domaine Sainte Rose harvested a small portion of old vine Alicante, which has
historically been used to add colour when blending wines. Alicante is one of
only two red grape varieties which actually has red juice, (the other variety being Syrah).
During red wine production all other varieties pick up colour from the
maceration process.
Old
vine Alicante with small yields can create some very interesting blueberry,
liquorice, chocolate and coffee characteristics.
Domaine Sainte Rose harvested the Alicante
on the 25th of August when the grapes registered 15.5
Baumé and had an
acidity content of 4.12
grams/litre H2S04. The Alicante will undergo
maceration for 1 week in order to
extract flavour and colour.
