2006 Merlot Grapes
Merlot
is best known for its velvety, smooth and mellow characteristics and it is often
used to blend with the variety Cabernet Sauvignon.
The Merlot was harvested on two separate days the 2nd and 5th September when
the grapes registered 14 Baumé and had an
acidity content of 3.1
grams/litre H2S04. The quality of the fruit was exceptional and the
flavours fully developed.
The Merlot will be
macerated for 3 weeks in
order to extract flavour and colour and a portion of the Merlot will be oak-aged.
Domaine Sainte Rose will produce one merlot based wine from the 2006 vintage.
