2007 Cabernet Sauvignon Grapes

Cabernet Sauvignon is one of the best known grape varieties.  It is planted and grown throughout the wine producing world.  It makes fine varietal wines, as well as blends and is known for its distinct blackcurrant aroma and taste.  Cabernet Sauvignon is capable of developing great complexity with age.

The Cabernet Sauvignon, at Domaine Sainte Rose, was harvested on the 17th and 19th of September when the grapes registered 13.6 Baumé and had an acidity content of 4.3 grams/litre H2S04. 

The Cabernet Sauvignon will be gently macerated in order to extract flavour and colour.  It will complete fermentation in American oak barrels and will then age for 12 months in the same barrels.  It will be used to create a blend with Syrah called Le Soleil du Sud.
