2007 Merlot Grapes
Merlot
is best known for its velvety, smooth and mellow characteristics and it is often
used to blend with the variety Cabernet Sauvignon.
With a goal of brining in a flavour spectrum we will pick different blocks of
Merlot at different stages of development. The first harvesting of
Merlot took place on 29th August when the grapes registered 12.6 Baumé and had an
acidity content of 3.6
grams/litre H2S04. The quality of the fruit was exceptional and the first
set of berries are lovely and fruity. The second harvesting took place on
September 7th with grapes having picked up greater complexity and sugar (13.7%).
The Merlot will be
gently
macerated for the week
using temperature controlled, open-top fermenting tanks in
order to extract fruity flavours and colour. A portion of the Merlot will be oak-aged.
Domaine Sainte Rose will produce one merlot based wine from the 2007 vintage.
