2007 Muscat Grapes
The Muscat was picked on the 16th of August,
alongside the first lot of Chardonnay. This is the first crop to be taken from
the Muscat vines, which were planted in March 2005.
Muscat is a variety grown widely in the Languedoc,
therefore thrives in the warm, dry climate. As you can read further in the
Growing Season report, Sainte Rose has had significant rainfall during 2007
therefore the humidity did produce a risk of rot in this sensitive variety.
The harvest was conducted at night to ensure that the
grapes were picked at a cool temperature thus ensuring that the fermentation did
not begin while processing the fruit. The berries were clean and the juice was
immensely aromatic.
Having chilled the must and racked the juice, the Muscat
was then transferred to oak barrels where fermentation was instigated by adding
yeast. The barrels are stored a temperature controlled environment to ensure
optimum control.
We will produce one Muscat product from the 2007 vintage.
