2009 Sauvignon Blanc Grapes

Domaine Sainte Rose started the Sauvignon Blanc harvest on 21st August, 2008 when the grapes registered 11.9 Baumé and had an acidity content of 3.4 grams/litre H2S04.  We subsequently picked a second riper selection on 24th August.  The fruit was exceptionally clean and healthy, having certainly benefited from the cool nights throughout August.

This is the third crop to be taken from the Sauvignon Blanc vines, which were planted in March 2005.  Being a typically cool climate grape variety grown in the warmer climate of the Languedoc, the goal with the Sainte Rose Sauvignon was to pick it early and preserve the true varietal character.  Picking early would keep the acidity high and the flavours fresh, even slightly green. 

As per the other varieties there still has to be harmony between the sugar content, acidity and phenolic maturity in the grapes.  The harvest was conducted at night to ensure that the grapes were picked at a cool temperature thus ensuring that the fermentation process did not begin until the desired moment.  Fermentation occurred once the grapes were safely in a temperature controlled environment.

We will produce one Sauvignon Blanc product from the 2009 vintage:
