Baumé- Widely used French scale of measuring the concentration
of sugar in grape must (1 degree Baumé equals 17-18 grams of sugar in 1 litre of
water). A reading of, for example, 12 degrees Baumé indicates that the
must would yield a wine of approximately 12% alcohol by volume. A
refractometer is the instrument that
interprets this scale.
