Imperatives- To Grow & Harvest

 

  • Use minimal amounts of human intervention to ensure authenticity i.e. fertilisers, herbicide, pesticides and irrigation

  • Carefully chosen harvesting times that respect each variety

  • Maximise phenolic maturity, while balancing sugar and acidity

  • Crop at 35-50 Hectolitres per hectare or below  to guarantee quality.  (VDP currently allows 80-90 Hectolitres per hectare)

  • Handpicked harvest, where relevant to ensure quality control and authenticity
